Glazed Chicken With Pineapple Salsa

Seasoned butter glazes these chicken breasts that are served with a delicious fruit salsa.

Ingredients

Salsa

1/4 cup chopped fresh cilantro
1 (8-ounce) can pineapple tidbits or crushed pineapple, drained
1 jalapeño chile pepper, seeded, chopped
1 tablespoon apple jelly

Chicken

2 tablespoons apple jelly
1 teaspoon lemon juice
1/4 teaspoon ground cumin
1/8 teaspoon garlic powder
6 (5-ounce) boneless skinless chicken breasts

Directions

Heat gas grill on medium or charcoal grill until coals are ash white. Combine all salsa ingredients in small bowl. Cover; refrigerate until serving time.

Combine butter and 2 tablespoons apple jelly in small bowl. Microwave on HIGH (100% power) until melted (15 to 20 seconds); stir. Add lemon juice, cumin and garlic powder; mix well.

Place chicken breasts onto grill. Grill, turning once, until lightly browned (8 to 10 minutes). Brush with butter mixture; continue grilling, brushing occasionally with butter mixture, until internal temperature reaches at least 165°F. and juices run clear when pierced with a fork (3 to 5 minutes). Serve with salsa.

I was surprised by how much I liked the pineapple salsa! Next time I just think I'd use more glaze - it looked beautiful but wasn't as seasoned as I would have liked.
