Pastel De Tortilla En Capas

1 libra de picadillo de res sin grasa
1 (1 taza) cebolla grande cortada en pedazos
2 cucharaditas de ajo fresco finamente cortado
2 cucharadas de mezcla de aderezo para taco
12 onz (3 tazas) de queso Monterrey Jack y/o Cheddar, desmenuzado
8 tortillas de harina de (10 pulgadas)
1 lata (10 onz) de salsa enchilada
1 lata (16 onz) de frijoles refritos
1 lata (4.5 onz) de chiles verdes cortados y escurridos
1 tomate pequeño (1/2 taza) cortado
2 cucharadas de aceitunas sin semillas en rodajitas


Calentar el horno a 375°F. Rociar un molde de pizza de 12 pulgadas, con borde, con antiadherente para cocinar. Poner a un lado.

Cocinar el picadillo, cebolla y ajo en un sartén de 10 pulgadas a fuego mediano-alto, revolviendo ocasionalmente, hasta que la carne esté dorada (5 a 7 minutos). Drenar la grasa. Añadir la mezcla de aderezo para taco y poner a un lado.

Para armar, coloque 1 tortilla en una cacerola preparada; cubrir con 2-1/2 cucharadas de salsa enchilada dejando 1 pulgada alrededor del borde de la tortilla. Repetir con la segunda tortilla y la salsa. Verter encima la mitad de la mezcla del picadillo y 1 taza de queso. Colocar otra tortilla encima; verter la salsa. Añadir otra tortilla; cubrir con los frijoles refritos y los chiles. Repetir dos capas más de tortillas y salsa; cubrir con la mezcla restante de picadillo y una taza de queso. Colocar las dos últimas tortillas y la salsa restante sobre el picadillo, terminando con salsa.

Hornear durante 30 minutos. Cubrir con la restante taza de queso. Continuar horneando durante 8 o 10 minutos o hasta que el queso comience a derretirse. Añadir los tomates cortados y aceitunas. Dejar descansar por 10 minutos antes de cortarlo en pedazos con un cuchillo aserrado. Adornar con cilantro, si se desea.
