Taco macaroni is a flavorful easy-to-make dish for supper.
Cook ground beef in 10 or 12-inch skillet over medium-high heat, stirring occasionally, until lightly browned (5 to 7 minutes). Drain off fat.
Stir in seasoning mix. Add water, uncooked macaroni and tomatoes; mix well. Continue cooking until mixture comes to a full boil (3 to 5 minutes).
Reduce heat to low. Cover; cook, stirring occasionally, until macaroni is tender (14 to 16 minutes). Stir in sour cream; sprinkle with cheese. Cover; let stand about 5 minutes before serving.

Really easy! I used a can of tomatoes and habaneros so it was extra spicy, and replaced the beef with a can of black beans to accommodate our vegetarians. I also just mixed the cheese in with the sour cream rather than sprinkling it on top, so our version looked a little paler, but tasted just as good.
This was a winner after I increased the taco seasoning, cheese, sour cream, elbow pasta and added black olives.

My children did not like it- It was too spicy with the the peppers and chili.
We like extra taco flavor so I used 2 Tablespoons of taco seasoning...this was fantastic. A new family favorite.
