Chocolate Almond Wafers

This elegant looking chocolate wafer cookie melts in your mouth.

Ingredients

Dough

1 cup sugar
3/4 cup LAND O LAKES® Butter, softened
3 (1-ounce) squares unsweetened baking chocolate, melted
1 egg
1 teaspoon almond extract
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup blanched almonds, chopped

Glaze

2 (1-ounce) squares bittersweet baking chocolate
2 (1-ounce) squares white baking chocolate
2 teaspoons shortening

Directions

Combine sugar, butter, melted chocolate, egg and almond extract in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add flour, baking powder and salt. Beat until well mixed. Stir in chopped almonds.

Divide dough in half. Shape each half on waxed paper into 12x1 1/4-inch log. Wrap in waxed paper or plastic food wrap. Refrigerate until firm (2 hours or overnight).

Heat oven to 350°F. Cut logs into 1/4-inch slices with sharp knife. Place 1 inch apart onto ungreased cookie sheets. Bake for 9 to 11 minutes or until set. Cool completely.

Meanwhile, place bittersweet chocolate and 1 teaspoon shortening in small microwave-safe bowl. Place white baking bar and remaining shortening in another small microwave-safe bowl. Microwave on MEDIUM (50% power) until melted (2 to 3 minutes). Drizzle cooled cookies with both glazes.
