Cincinnati Chili

Cincinnati chili is essentially chili served over cooked spaghetti - a regional favorite in Ohio! This chili can also be the coney sauce on a Coney Island hot dog.

1 small (1/2 cup) onion, chopped
1 teaspoon finely chopped fresh garlic
1 pound lean ground beef
1/2 cup water
1 (29-ounce) can tomato sauce
1 tablespoon unsweetened cocoa
1 tablespoon Worcestershire sauce
1 teaspoon instant beef bouillon
1 teaspoon ground cinnamon
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1 (16-ounce) package uncooked dried spaghetti
Shredded Cheddar cheese, if desired
Chopped red onion, if desired


Melt butter in 4-quart saucepan over medium-high heat until sizzling.  Add onion and garlic; cook 2-3 minutes or until softened.  Add ground beef; continue cooking, stirring occasionally, 4 -5 minutes or until browned. Drain off fat, if necessary.

Stir in all remaining ingredients except spaghetti, cheese and red onion. Continue cooking 4-5 minutes or until mixture comes to a boil. Reduce heat to low. Cover; cook 50-60 minutes or until flavors are blended.

Cook spaghetti according to package directions. Drain.

Divide cooked spaghetti evenly among 5 bowls; spoon chili mixture over spaghetti. Top each serving with cheese and onion, if desired.

Recipe Tip

To serve in typical “Cincinnati-style”, pass bowls of chopped onion, chopped garlic and hot cooked pinto beans.

This recipe is delicious! I was really surprised how easy it was to make. It smelled heavenly while it was cooking.

At first I thought it might be too salty when I was tasting it as it was cooking, but once it was on top of the spaghetti noodles, covered with cheese, red kidney beans, and chopped green onions, it was absolutely perfect in every way.

The recipe does not have a lot of chili powder in it compared to many other recipes on the Internet, so this sauce has only a mild chili flavor, which is what I prefer. The flavor is very unique and delicious because of the spices in the recipe. I followed the recipe exactly and it was excellent. I will definitely be making this recipe often.

taste just like i remember it 30 years ago. Over noodles in Ohio, over hot dogs in MI, over rice in HI. easy to make & soooo good! I make it once a month for 30 people at my job & all love it!
This recipe is fantastic. I have made it many times and all ages really like it. The ingredient combination may seem strange but the flavors meld beautifully. It also freezes well.
