Cranberry Macadamia Bars

An orange glaze complements this bar filled with dried cranberries, coconut and macadamia nuts. Easy to serve to a crowd, this dessert recipe makes a great addition to Thanksgiving or Christmas get-togethers.

2/3 cup all-purpose flour
1/3 cup Land O Lakes® Butter, softened
2 tablespoons sugar


1/2 cup sweetened flaked coconut
1 (3.25-ounce) jar (2/3 cup) macadamia nuts, coarsely chopped
1/2 cup sweetened dried cranberries
1/3 cup sugar
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt


1 cup powdered sugar
1 teaspoon freshly grated orange zest
2 to 3 tablespoons orange juice


Heat oven to 350°F. Combine all crust ingredients in small bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press into ungreased 8-inch square baking pan. Bake for 15 to 17 minutes or until lightly browned.

Meanwhile, combine all filling ingredients in medium bowl until well mixed. Carefully spread filling over hot, partially baked crust. Bake for 22 to 27 minutes or until golden brown.

Meanwhile, combine powdered sugar, orange zest and enough orange juice for desired glazing consistency in small bowl. Drizzle glaze over warm bars. Cool completely.

Came out just as pictured--very quick and easy! Much requested at work!
The flavor was fine, but I didn't get this puffy cake look to my bars....I even tried the recipe THREE times. Did not come out like the picture at all.
We do not like coconut. What should we substitute for the 1/2 cup of coconut? (Cranberry Macadamia Bars)
These are AMAZING!!! So good, you must try it to know for yourself.
