Norsk Apple Muffins

This flavorful apple muffin recipe is inspired by a classic Norwegian apple cake often served for afternoon coffee.

Ingredients

Muffins

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup sugar
1/3 cup Land O Lakes® Butter, softened
2 teaspoons freshly grated lemon zest
1 medium (1 cup) apple, cored, peeled, finely chopped

Topping

1/4 cup sugar
1/4 cup sliced almonds

Directions

Heat oven to 375°F. Grease or line muffin pan cups with paper baking cups; set aside.

Combine flour, baking powder, salt and cinnamon in bowl. Set aside.

Combine sugar and butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Stir in eggs and lemon zest. Continue beating, scraping bowl often, until well mixed. Stir in flour mixture just until moistened. Gently stir in apples. Spoon into prepared muffin pan.

Sprinkle sugar and almonds evenly on top of each muffin. Bake 18-22 minutes or until lightly browned. Let stand 5 minutes; remove from pans.

I made these for my grandchildren and they were wonderful!
Just one word describes this recipe,DELICIOUS
The muffin itself was excellent; very moist. I would change the topping, however, There was too much granulated sugar. I did not use it all on 12 muffins and it did not melt. It just fell off the top aftger baking along with some of the almonds. I would do what the last reviewer did and use brown sugar and lightly press the almonds on top before baking.
very good not too sweet. on top i sprinkle brown sugar , grind amond nuts ,oats and cinimon.
This recipe is great. Even my kids asked for seconds and they are very picky eaters. These apple muffins have lots of flavor and are made with stuff already in the house. I did omit the almonds but will definitly be making this recipe again and again.
