Homemade caramel corn recipe. It always sells fast at our annual fund drive!
Heat oven to 200°F.
Combine popcorn and peanuts, if desired, in large roasting pan; set aside.
Combine brown sugar, butter, corn syrup and salt in 3-quart saucepan. Cook over medium heat, stirring occasionally, 8-10 minutes or until mixture comes to a full boil. Continue cooking, stirring occasionally, 5 minutes.
Remove from heat; stir in vanilla and baking soda. Carefully pour hot syrup mixture over popcorn and peanuts in pan; stir until well coated.
Bake, stirring every 15 minutes, 1 hour or until caramel corn is crisp. Immediately place caramel corn onto waxed paper. Cool completely. Break into bite-sized pieces. Store in tightly covered container.

Love this recipe!! its a very easy recipe to make, the hardest thing is baking it for a hour without eating it all when you take it out ever 15 minutes to stir.
My family loves this recipe! We have been making this recipe since my children were small, and now they are making with their children. It is so much fun to see the "magic" of the sauce puffing up when the baking soda goes in. It makes a great gift as well.
