Ingredients

3 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt

2 pounds boneless skinless chicken thighs,   cut in 1 1/2-inch pieces

1 small (1/2 cup) onion, chopped

1/2 teaspoon finely chopped fresh garlic

1 teaspoon crushed red pepper flakes

1 teaspoon salt

2 medium sweet potatoes, peeled, cut into 1 1/2-inch cubes

1 medium red bell pepper, cut into 1 1/2x1/2-inch pieces

1 1/2 cups chicken broth

1/2 cup peanut butter

1/2 cup sliced green onions

1/4 cup chopped dry roasted peanuts

 *Substitute 2 (20-ounce) packages chicken thighs.

How to make

  1. STEP 1

    Melt butter with olive oil in 12-inch skillet over medium heat; add chicken, onion, garlic, red pepper flakes and salt. Cook, stirring often, until chicken is browned.

  2. STEP 2

    Place sweet potatoes into 3 1/2- or 4-quart slow cooker; top with chicken and bell pepper. Pour in chicken broth.

  3. STEP 3

    Cover; cook on Low heat setting 3-4 hours or until chicken and sweet potatoes are tender. Stir in peanut butter until heated through.

  4. STEP 4

    Spoon into individual bowls; sprinkle each serving with green onions and peanuts.

Tip #1

For best color, select orange or red sweet potatoes.
