Peanuts and sweet potatoes are a mainstay of African cooking. They perfectly complement the tender pieces of chicken.
Melt butter with olive oil in 12-inch skillet over medium heat; add chicken, onion, garlic, red pepper flakes and salt. Cook, stirring often, until chicken is browned.
Place sweet potatoes into 3 1/2- or 4-quart slow cooker; top with chicken and bell pepper. Pour in chicken broth.
Cover; cook on Low heat setting 3-4 hours or until chicken and sweet potatoes are tender. Stir in peanut butter until heated through.
Spoon into individual bowls; sprinkle each serving with green onions and peanuts.
*Substitute Land O Lakes® Butter.
**Substitute 2 (20-ounce) packages chicken thighs.

Yes...I know. Who makes a stew smack-dab in midsummer??? Well, I do...and I'm so glad I did!!! This savory stew called us in from the rain. What a perfect blend of flavors melded together!! Don't substitute a thing as it sings a harmony just the way it is.....a little hot, a little spicy and definitely peanutty good.
