Serve up this spicy and hearty potato and egg skillet on those busy days when time is short!
Cook sausage in 12-inch skillet over medium-heat 6-8 minutes or until no longer pink. Add potatoes; continue cooking, stirring occasionally, 6-8 minutes or until potatoes are tender. Stir in beaten eggs and chiles. Reduce heat to medium. Cook, stirring gently, 1-2 minutes or until eggs are set.
Remove from heat; top with cheese slices. Cover; let stand until cheese is melted.
Serve with sour cream and salsa, if desired.
*Substitute pork sausage.

This was a hit with my whole family. Made it exactly as the recipe said and it was very good. The only change we made was we used taco sauce instead of salsa. Tasted just as good! My kids' liked it so much they thanked me repeatedly during the meal for making such a yummy meal. Can't go wrong with reviews like that! :) Will definitely be making it again.
