Peanut Butter Hedgehogs

These cute little critters combine peanut butter and chocolate into one great tasting cookie.

1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup Land O Lakes® Butter, softened
1/2 cup creamy peanut butter
2/3 cup firmly packed brown sugar
1/3 cup sugar
1 teaspoon vanilla
1 cup mini real semi-sweet chocolate chips


Heat oven to 350°F. Combine flour, baking powder and salt in medium bowl. Set aside.

Place butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add peanut butter, brown sugar and sugar; continue beating until well mixed. Add 1 egg and vanilla; continue beating until well mixed. Reduce speed to low; add flour mixture. Beat until well mixed.

Beat remaining egg in small bowl. Place chocolate chips in another small bowl.

Shape dough into 1-inch balls. Picking up ball between thumb and index finger, gently shape nose of hedgehog. Dip back of hedgehog into egg mixture and then into chips. Place 2 inches apart onto greased cookie sheet. Place 2 chips on each cookie to form eyes. Repeat with remaining dough. Bake for 10 to 12 minutes or until cookies are just set.
