Mini cupcakes that let the flavor of cinnamon shine.
Heat oven to 350°F. Place mini paper baking cups into mini muffin pan cups; set aside.
Combine flour, baking powder and salt in bowl; set aside.
Combine sugar and 1/2 cup Cinnamon Sugar Butter Spread in another bowl. Beat at medium speed, scraping bowl often, until well mixed. Add 1 egg at a time, beating well after each addition. Add flour mixture, alternately with 1/2 cup milk and 1 1/2 teaspoons vanilla, beating at low speed after each addition until well mixed.
Spoon 1 level tablespoon batter into each prepared muffin pan cup. Bake 14-16 minutes or until center is set. Cool 10 minutes in pan; remove to cooling rack. Cool completely.
Combine all frosting ingredients except milk in bowl. Beat at medium speed, adding enough milk for desired spreading consistency, until creamy. Frost cooled cupcakes.

These were really good, but the frosting is very sweet, and so i would barely put any next time. Making 1/4 the amount of frosting listed is sufficient. Also, I made these in a regular-size muffin pan and it made 12.
Has anyone made regular sized cupcakes using this recipe, rather than the mini versions? I really want to make these for a charity event in 3 days time, but need to make 24 cinnamon fairy cakes/cupcakes - will the measurements given in this recipe be enough? Hope someone sees this soon and can help me out! x
These were sooooooo good! I'm a cinnamon fan in general, but wasn't sure how I'd like cinnamon cupcakes. Let me just say, these were outstanding - and so easy! Love this recipe and the cupcakes were moist and delicious.
The cupcake is great but the frosting is way too sweet. I am going to try a cream cheese frosting on my next batch and may double the amount of spread in the cupcake for more flavor. Smells wonderful when baking for sure. It can be good plain too.
I have made this recipe twice. The family and friends can't get enough. They are absolutely delicious. Facts I feel I must share. Using a 1 tablespoon measurement and 1.25 mini baking cup, this recipe made 48 not 36. Bonus! The frosting recipe is more than enough to frost all cupcakes. Also, the first time you make them, check on your cupcakes after 10 minutes. Mine were done. Ovens vary, and baking time varies.
i made these regular size and they were awesome.....big hit with my four kids...simple to make also.
