Sweet potatoes are baked with a hint of cinnamon and orange and make the perfect side dish for a holiday meal.
Heat oven to 400°F.
Prick sweet potatoes with fork. Bake 50-55 minutes or until soft. Cool slightly on cooling rack.
Cut lengthwise slit in potatoes almost all the way through, leaving about 1 inch at each end intact. Scoop out flesh, leaving 1/2-inch border on skins.
Place flesh into bowl; add all remaining ingredients. Beat at medium speed until smooth.
Spoon mashed potato mixture evenly into skins. Bake 15-20 minutes or until heated through.
Top with Cinnamon Sugar Butter Spread, as desired.

My husband was impressed with this delicious and easy recipe. It looked great and tasted even better. There were no leftovers. A wonderful option to use instead of regular potatoes.
Next time I make this recipe, I will use far less salt--perhaps 1/4 tsp. I also cooked it in my microwave's "potato" setting instead of using my oven. I enjoyed the addition of the dijon. I also mashed mine with a potato masher after cooking.
