Citrus Apple & Pear Salad

Ingredients

Dressing

1/4 cup olive oil

2 tablespoons rice vinegar

1 tablespoon sugar

1 tablespoon lime juice

1 teaspoon freshly grated lime zest

1 teaspoon finely chopped fresh garlic

1/2 teaspoon salt

1/4 teaspoon chili powder

Pepper, if desired

Salad

3 medium (4 cups) tart red apples, cut into 1/2-inch pieces

2 small (2 cups) pears, cut into 1/2-inch pieces

1/2 cup sliced red onion rings, cut in half

2 cups baby spinach leaves, torn

5 slices cooked bacon, chopped

4 ounces (1 cup) shredded Cheddar cheese

How to make

  1. STEP 1

    Combine all dressing ingredients in medium bowl; beat with wire whisk until sugar is dissolved. Set aside.

  2. STEP 2

    Combine apples, pears, onion and spinach leaves in large bowl. Pour dressing over apple mixture; toss to coat. Sprinkle with bacon and cheese. Serve immediately.

Tip #1

- No need to peel the fruit in this recipe. The peel adds great color and extra fiber to the salad.

Tip #2

- Dressing can be made up to 3 days ahead. Store refrigerated.
