1/2 cup uncooked old-fashioned or quick-cooking oats
3 (5x2-inch) (1/2 cup) graham crackers, coarsely chopped
1 (3.4-ounce) box instant banana cream-flavored pudding and pie filling mix
1 1/2 cups fresh raspberries and/or blueberries
Heat oven to 350°F. Combine all granola ingredients in medium bowl; stir well to combine. Spread into lightly greased 9-inch square baking pan. Bake 11-12 minutes, stirring once, until golden brown. Cool completely; break apart.
Meanwhile, combine pudding mix and half & half in medium bowl. Beat according to package directions. Place plastic food wrap directly onto surface of pudding. Refrigerate until ready to assemble parfaits.
To assemble parfaits; layer ingredients starting with 1 tablespoon granola, 1/4 cup pudding and 1/4 cup berries; repeat layers ending with granola.
Serve immediately or cover each and refrigerate up to 2 hours.
- Double granola recipe and make extra granola for snacking.
- Omit the pudding and use vanilla yogurt for a healthy breakfast.
