Meatless Sloppy Joes
You won’t miss the meat in this tasty sandwich.

2 1/2 cups water
1 cup dried lentils
1 medium (1/2 cup) onion, chopped
1 medium (1/2 cup) carrot, chopped
1 (6-ounce) can tomato paste
1/3 cup water
1 tablespoon firmly packed brown sugar
2 teaspoons country-style Dijon mustard
1/4 teaspoon salt
8 whole wheat hamburger buns
16 slices (2 1/4 x 1-inch) Cheddar cheese, each cut in half
Place lentils and water in 2-quart saucepan. Cook over high heat until mixture comes to a boil (3 to 4 minutes). Reduce heat to medium. Cover; cook 20 minutes. Stir in onion and carrot. Cover; continue cooking until lentils are tender (15 to 20 minutes). Drain, if necessary.
Stir in tomato paste, water, brown sugar, mustard and salt. Cook over medium heat, stirring occasionally, until heated through (3 to 5 minutes). Spoon mixture onto buns; top hot lentil mixture with 2 pieces cheese.
