Red Pepper Asiago Gougère Bites

Gougère, a cream puff-like pastry, is easy to make. These warm, savory mini bites are a perfect holiday appetizer.

Ingredients

1 cup water
1 cup all-purpose flour
1/2 teaspoon garlic salt
1 1/2 cups (6 ounces) finely shredded Asiago or Parmesan cheese
1/2 cup finely chopped red bell pepper
1 1/2 tablespoons finely chopped fresh basil*

Directions

Heat oven to 400°F. Line baking sheets with parchment paper. Set aside.

Place water and butter in heavy 2-quart saucepan. Cook over medium heat 6-8 minutes or until mixture comes to a full boil. Reduce heat to low; stir in flour and garlic salt vigorously until mixture leaves sides of pan and forms a ball. Remove from heat. Add 1 egg at a time, beating well after each addition, until mixture is smooth. Stir in 1 cup cheese, bell pepper and basil.

Immediately drop dough by rounded teaspoonfuls onto prepared baking sheets. Sprinkle each with 1/4 teaspoon remaining cheese. Bake 20-22 minutes or until golden brown. Serve warm. 

*Substitute 1 1/2 teaspoons dried basil leaves.

Recipe Tip

To make ahead, bake as directed. Cool completely. Place cooled bites onto baking sheets; place into freezer until firm. Place frozen bites into resealable plastic freezer bags. Freeze up to 2 months. To reheat, heat oven to 350°F. Place frozen bites in single layer onto ungreased baking sheets. Bake 8-10 minutes or until heated through.

What a great Christmas addition to the table!
Absolutely love this recipe. So easy to make and delicious. I plan on always having some on hand in the freezer for a quick appetizer for unexpected company.
I love this recipe in that it allows you to try various substitutions. Next time I want to use chopped kalamata olives instead of red pepper.
I added all the asiago called for (supposed to just use 1 cup) so just topped with some shredded cheddar which was fine.
On some bites I did top with a sliced olive and my son and I preferred these more.
It was also delicious with some pesto on top (top them 5 minutes before done).
I substituted Locatelli Romano cheese,two cloves of fresh garlic and 1/2 tsp. of salt. My entire family really enjoyed them as an appetizer. They do need to be eaten warm because they are a little soft when cool.
I would rate this recipe not a 5 star but 10 OMG they are so good I am also going to try a different cheese. They do freeze very well and heat up nicely but they didn't stay in the freezer too long either had to have them for a get together.
Everyone loved these at the get together I brought them too! I thought they were easy to make and I plan on making more to freeze for future parties.
I made this recipe this past weekend for a party in our home and these were a big hit. My mother had to move away from them to stop eating them!
I added jalapenos and yes their are several possibilities for this recipe. It is a perfect low calorie and fat snack for adults and the kids. Actually I let the kids reccomend their own ingredients.
Very easy to make. I used garlic powder, did not have garlic salt. I used fresh cilantro since that is what I had. These were very good. I can see a lot of new possibilities with this reciepe. Personally, I would double or triple the amount of garlic powder. There was a need for salt to bring out the flavour, since I did not use garlic salt. I'm thinking these would be awesome adding some finley minced green olives and minced pepperoni. Can't wait to make them again, my style!
