3/4 cup sugar
1 teaspoon vanilla
1 teaspoon freshly grated orange zest
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup bittersweet or semi-sweet chocolate chips
2 teaspoons shortening
Coarse grain sugar
Red cinnamon candies, if desired
White decorator frosting or gel, if desired
Heat oven to 375°F.
Combine butter and sugar in bowl; beat at medium speed until creamy. Add egg, vanilla and orange zest; continue beating until well mixed. Add flour and salt; beat at low speed until well mixed.
Place dough into cookie press; form desired shapes 1 inch apart onto ungreased cookie sheets. Sprinkle cookies with coarse grain sugar. Bake 8-10 minutes or until cookies are set. Remove to cooling rack. Cool completely.
Place chocolate chips and shortening in bowl. Microwave, stirring every 15 seconds, 45-60 seconds or until chocolate is melted and mixture is smooth. Spoon 1/2 teaspoon chocolate onto bottom-side of 1 cookie; top with another cookie, bottom-side down. Repeat with remaining cookies. Attach red cinnamon candy onto center of each cookie with white decorator frosting, if desired.
Using a cookie press template allows the chocolate to show both on the edges and through the open areas of the cookie sandwich.
