Butter cookies with a pastel mint to add a hint of spring to this traditional butter cookie recipe.

Ingredients

1 1/4 cups sugar
3/4 cup LAND O LAKES® Butter, softened
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
48 mint meltaway candies

Directions

Heat oven to 375°F. Combine 1 cup sugar, butter, egg and vanilla in large bowl. Beat at medium speed until well mixed. Reduce speed to low; add flour, baking soda and salt. Beat until well mixed.

Shape dough into 1-inch balls; roll in remaining sugar. Place 2 inches apart onto ungreased cookie sheets.

Bake for 8 to 10 minutes or until edges are very light golden brown. Remove from oven; immediately press 1 mint candy in center of each cookie. Remove from cookie sheets to wire cooling rack; cool completely.

These came out just perfect for me - the cookies were soft and chewy, and had that perfect soft cracked appearance, just like in the photo. To those who mentioned they came out flat, sometimes that is due to "old" leavening ingredients, and I'd suggest starting over with a brand new box of baking soda. That often fixes the problem of flat cookies! If your baking soda is more than about 6 months old it doesn't work as well in recipes. The only reason I didn't rate this recipe 5 stars is that it only made 3 dozen for me, not 4 dozen as the recipe stated. Not a big deal but for an Easter party or baby shower I might want to double the recipe.
A cute, easy, basic cookie with a great buttery, minty payoff. Preferred the mouthfeel of biting into while the mint was still a little soft up to an hour or so after cooling.
Francine, The pastel mints are typically found in the bulk candy section of a supermarket, or at a candy counter. You could even check a candy store. They are often called pastel mints or mint meltaways.
I would love to try this recipe but am unable to fine the pastel "kisses". I have searched "mint meltaway candy" and the search yields dipped candies that are not appropriate. Any leads would be greatly appreciated.
This recipe was a total disaster. The cookies were so flat you could hardly get them off the cookie sheet. And you certainly couldn't put the mint blossoms in them.
I have baked these for the last four Easters, and they are requested by my family.
They are easy, very tasty &look so pretty on a cookie tray.
I was disappointed that the cookie came out flat and did not hug the mint as I hoped ie peanut butter blossoms. The taste is good and the pastel colors are pretty.
I made these cookies last Easter. Everyone enjoyed them and the pastel color of the kisses were so pretty. I can see making these for a bridal or baby shower. Try them and you'll see what I mean!
