Peanut brittle is a holiday favorite treat.
Butter 2 (15x10x1-inch) baking pans; set aside.
Place sugar, water and light corn syrup into saucepan. Bring to a boil over medium-high heat 8-10 minutes or until candy thermometer reaches 280°F. or small amount of mixture dropped into ice water forms a hard but pliable strand.
Add butter and peanuts; cook, stirring constantly, 4-5 minutes or until temperature reaches 300°F. or small amount of mixture dropped into ice water forms a hard brittle strand. Remove from heat. Add vanilla and baking soda; stir until combined.
Immediately pour mixture onto prepared baking sheets; spread evenly to about 1/4-inch thickness. Cool completely.
Break into pieces. Store in container with tight-fitting lid.
Dietary Fiber: 1g
This was SOOOO easy and SOOO fast! The only things I would suggest would be to add just a touch/pinch of salt to the recipe to get a bit of that salt flavor because the brown sugar is all I can taste, although I used salted cashews. But they are truly decadent!
