Gint's Peanut Brittle
Gint, a retired Land O'Lakes employee, has mastered candy-making with this peanut brittle.

Butter 2 (15x10x1-inch) jelly-roll pans; set aside.
Place sugar, water and light corn syrup in 3-quart saucepan. Bring to a boil over medium-high heat until candy thermometer reaches 280°F. or small amount of mixture dropped into ice water forms a hard but pliable strand (8 to 10) minutes).
Add butter and peanuts; cook, stirring constantly, until temperature reaches 300°F. or small amount of mixture dropped into ice water forms a hard brittle strand (4 to 5 minutes). Remove from heat. Add vanilla and baking soda; stir until combined.
Immediately pour mixture onto prepared baking sheets; spread evenly to about 1/4-inch thickness. Cool completely.
Break into pieces. Store in container with tight-fitting lid.
