Apple, brown sugar and cinnamon are a perfect topping for this simple breakfast masterpiece.
Heat oven to 425°F.
Place 2 tablespoons butter in 9-inch glass pie pan; place pan in oven 4-5 minutes or until butter is melted and pie pan is hot. Spread melted butter over bottom of pan.
Whisk flour, milk and eggs together in bowl until well mixed. Carefully pour batter into hot pie pan. Bake 14-17 minutes or until puffed and light golden brown.
Melt remaining 2 tablespoons butter in small nonstick skillet over medium heat. Add maple syrup, apple slices, brown sugar and cinnamon. Cook, stirring occasionally, 4-5 minutes or until apple is tender; keep warm.
Spoon apple mixture over puffed pancake; sprinkle with powdered sugar. Serve immediately.

This recipe smells like Christmas! I used a 9" glass pie plate and the sides rose exactly like the photo, but I used the 2Tb butter and followed the directions, exactly. I used one large golden delicious apple, cut quarter-sized in diameter and very thin. I also used organic, 100% pure maple syrup. I thought it was very sweet, so a small portion goes a long way. The texture of the "pancake" is more like a thick crepe or tender French toast. You can smell when the "pancake" is nearly done baking when you start to smell a nearly burnt egg smell. Don't be tempted to take the pancake out too soon, but don't... let it go for the 14 minutes, or the middle section won't cook through.

Back in the dark ages, (read 1970's I fell in love with Bickford's Big Apple Pancake and I've been trying to replicate it since then. My hopes were extremely high when I found this recipe, but the final result just wasn't stellar. The finished product was soggy and leaden, not at all like the Bickford's Big Apple I remember so fondly. Oh well, back to the drawing board.
Pancake was surprisingly tasty, for having such simple ingredients. Mine rose assymetrically, but relaxed back to a normal shape. I don't think a 9-inch pie plate would produce the high-edged version in this site's photo ... it would probably need a much smaller (6-7-inch?) pan to get that effect. The sauce was nice, too. Not too sweet. I used two apples, and had plenty of sauce. We'll definitely make this dish again.
What a great treat for breakfast. Only thing, My husband says we should have made two. This receipe I will certainly pass on.
