Warm Thai Basil Noodles
Fresh herbs and a kick of crushed pepper flakes give this side dish fantastic flavor. Serve it with grilled chicken or shrimp.

1/2 cup chopped fresh basil leaves
1/2 cup chopped fresh cilantro
1/4 cup fresh lime juice
2 tablespoons honey
1 teaspoon salt
1 teaspoon chopped fresh gingerroot
1/2 teaspoon crushed red pepper flakes
1 cup pea pods, strings removed, cut in half
1 cup julienne or matchstick carrots
1 teaspoon finely chopped fresh garlic
12 ounces dried linguine noodles (broken in half), cooked, drained
1/2 cup sliced green onion, if desired
1/2 cup chopped salted peanuts, if desired
Combine all sauce ingredients in small bowl; mix well. Set aside.
Melt 2 tablespoons butter in 12-inch skillet over medium-high heat until sizzling; add pea pods, carrots and garlic. Continue cooking 2-3 minutes or until carrots are crisply tender. Stir in cooked noodles and sauce. Continue cooking 2-3 minutes or until heated through.
Top with sliced green onion and chopped peanuts, if desired. Serve immediately.
