2 tablespoons mayonnaise
2 tablespoons apricot preserves
8 (3x5x1/2-inch thick) slices your favorite artisan bread
1/2 pound thinly sliced deli ham
2 (1/8-inch) slices red onion, separate rings
16 (1/8-inch) slices unpeeled tart apple
4 plank dill pickle slices, if desired
Combine mayonnaise and apricot preserves in bowl. Spread each slice of bread with 1/2 tablespoon mayonnaise mixture.
For each sandwich, layer 1 bread slice, mayonnaise-side up, with 1/2 slice cheese, 1/4 ham, 1/4 onion, 2 slices apple, 1 slice pickle and 1/2 slice cheese. Top with another bread slice, mayonnaise-side down.
Evenly spread butter over outside of bread slices. Cook 2-3 minutes or according to panini grill instructions.
Pan Grilling Instructions: Heat 12-inch skillet on medium heat. Place sandwiches in skillet. Cook, turning once, 2-3 minutes or until bread is golden brown and cheese is melted.
Plank sliced pickles are large dill pickles that are sliced lengthwise and are perfect for sandwiches.
