Veggie Cheese Sandwich with Ranch Hummus
This delicious sandwich is a great way to get your kids to eat their veggies – and love them!

1/4 cup hummus
1 tablespoon ranch dressing
4 flat thin deli rolls, split
4 romaine lettuce leaves
1/4 cup shredded carrot
16 thin slices seedless English cucumber
8 thin strips red bell pepper
Combine hummus and ranch dressing in small bowl.
Spread hummus mixture evenly among bottom halves of rolls. Top each with 1 lettuce leaf, 2 slices cheese, 1 tablespoon shredded carrot, 4 thin slices cucumber, 2 thin strips bell pepper and top half of roll.
