Heat oven to 450°F. Press pizza dough into 15x10-inch rectangle. Cut into 4 (7x5-inch rectangles).
Place 1 slice cheese onto half of each piece of dough. Top each with 1/3 cup scrambled eggs, 1/4 crumbled bacon and 1 slice cheese. Fold dough over filling, aligning edges. Press edges with fork to seal.
Place onto greased or parchment-lined baking sheet. Brush tops with egg; cut 2 slits in top with sharp knife.
Bake 10-12 minutes or until golden brown.
To make ahead, prepare and bake as directed above; cool. Wrap each in plastic food wrap; place into large resealable freezer bag. Freeze up to 2 months. To reheat, place 1 frozen hand pie onto microwave-safe plate; microwave 45-60 seconds or until heated through.
