These melt-in-your-mouth wafers are filled with a rich raspberry-flavored cream.
Heat oven to 375°F.
Combine flour, 3/4 cup butter and 2/3 cup powdered sugar in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Gradually stir in 5 tablespoons whipping cream.
Roll out dough on lightly floured surface, one-third at a time (keeping remaining dough refrigerated), to 1/8-inch thickness. Cut with 1 1/2-inch cookie cutter. Dip 1 side of each cookie into sugar. Place 1 inch apart onto ungreased cookie sheets, sugared-side up. Bake 7-9 minutes or until edges are lightly browned. Cool completely.
Combine 1 1/2 cups powdered sugar, 2 tablespoons butter, 4 teaspoons whipping cream and raspberry syrup in small bowl. Beat at medium speed until creamy.
Spread scant teaspoonful filling on unsugared side of 1 cookie; top with second cookie. Squeeze together gently. Repeat with remaining cookies.
Dietary Fiber: 0g
Way. Too. Difficult. These cookies should come with a BIG warning label that they will be extraordinarily difficult for anyone-who-isnt-a-pastry-chef to make. Yes, the cookies taste good . . . they definitely DO melt in your mouth. However, the cost is spending hours working with extremely fragile dough (and losing some cookies just trying to roll out and bake), having a quarter of them break when trying to transfer to a cooling rack, and then losing at least another quarter (or more) when trying to frost and assemble the sandwiches. Wasted WAY too much of my holiday baking time on these. Are they good? Sure. Are they good-worth-the-time-and-effort? Probably not.
These cookies are delicious, and , as the name implies melt in your mouth! I added a few drops of red food coloring to give them a nice pink shade and they looked very pretty on the serving plate! Will be making these again!
