1 tablespoon dry ranch dressing mix
2 to 4 tablespoons milk
Crisply cooked crumbled bacon, if desired
Chopped cooked broccoli, if desired
Sautéed peppers and onions, if desired

Wash potatoes; prick each potato 2 to 3 times with fork. Place in microwave on paper towel; microwave 7 minutes. Turn potatoes over; continue microwaving until fork tender (6 to 10 minutes). Remove from microwave; let stand until cool (5 to 10 minutes).
Meanwhile, cut 6 slices cheese into quarters; set aside.
Cut each potato in half lengthwise. Scoop out potato, leaving thin shell. Place potato into large bowl; add cheese quarters, butter, ranch dressing mix and enough milk for desired consistency; mix well. Line each potato shell with 1 slice cheese. Fill potato shells evenly with potato mixture; top with desired toppings. Place onto microwave-safe plate. Microwave potatoes until hot and cheese is melted (1 to 2 minutes). Serve immediately.
For softer potatoes, add milk, 1 tablespoon at a time, until desired consistency is reached.
