Pumpkin Cookie Bars

These pumpkin bars with a tender shortbread crust, look like the layers of candy corn.

Ingredients

Crust

3/4 cup all-purpose flour
2 tablespoons sugar
1/4 cup Land O Lakes® Butter, softened

Filling

1 cup mashed cooked pumpkin*
1/4 cup sugar
1 (3-ounce) package cream cheese, softened
1/2 teaspoon pumpkin pie spice
1/2 teaspoon vanilla

Streusel Topping

1/2 cup firmly packed brown sugar
1/3 cup all-purpose flour
1/4 cup chopped pecans
1 teaspoon pumpkin pie spice
1/4 cup cold Land O Lakes® Butter, cut into chunks

Directions

Heat oven to 350°F. Line 9-inch square baking pan with aluminum foil, extending over edges. Set aside.

Combine all crust ingredients except butter in bowl. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Press onto bottom of prepared pan. Bake 15-18 minutes or until edges are lightly browned.

Combine all filling ingredients except egg in bowl. Beat at medium speed until well mixed. Add egg; continue beating until well mixed. Spread mixture over hot, partially baked crust.

Combine all streusel ingredients except butter in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Sprinkle mixture over filling. Bake 30-35 minutes or until topping is set.

 

*Substitute canned pumpkin.

Didn't even finish the recipe. The crust burnt after 9 minutes and was cracked all over. I think you need more butter for 3/4 c of flour.

We have tested this recipe a number of times and the crust has not burned. If the amount of butter is increased it will likely ooze out of the crust and be too wet.

Easy to make & yummy to eat. These bars were a big hit at a Halloween party!
