1 1/2 cups pancake and baking mix
1 cup sour cream
1/4 cup chopped fresh chives*
1/4 cup milk
1/4 teaspoon garlic powder
1/3 cup chopped pepperoni
Heat oven to 400°F. Spray 24 mini muffin pan cups with no-stick cooking spray; set aside.
Combine all ingredients except pepperoni in bowl. Stir just until moistened. Gently stir in pepperoni.
Spoon batter into prepared muffin pan cups, filling each 3/4 full. Bake 15-17 minutes or until lightly browned. Cool 5 minutes; remove from pans.
*Substitute 4 teaspoons dried chives.
A quick easy way to chop chives or pepperoni is to cut into small pieces using a scissors.
