1/2 cup apricot preserves*
1/4 cup spicy brown mustard
2 cups matchstick-cut carrots
4 (10x7-inch) sandwich wraps or (8-inch) flour tortillas
2 cups baby spinach leaves
1/2 pound very thinly sliced deli ham
Combine preserves and mustard in bowl; mix well. Combine 2 tablespoons preserves mixture and carrots in bowl; set aside.
Spread remaining preserves mixture evenly over 1 side of each tortilla. Top each with 1/2 cup spinach leaves, 1/4 ham and 3 halves cheese. Place 1/2 cup carrot mixture over cheese.
Roll up tightly. Cut each wrap in half; secure with toothpicks. Serve immediately.
*Substitute strawberry or peach preserves.
For transporting in a bag lunch, wrap tightly in plastic food wrap or waxed paper.
