2 ribs (1 cup) celery, cut into 1-inch pieces
2 medium (1 cup) carrots, cut into 1/2-inch pieces
3 garlic cloves, sliced
4 cups low sodium beef broth
1 (15-ounce) can crushed tomatoes
4 fresh thyme sprigs

Melt Butter with Olive Oil & Sea Salt in 12-inch skillet over medium-high heat; add short ribs. Cook 12-15 minutes or until browned on both sides. Place short ribs into slow cooker.

Place onions, celery and carrots into same skillet. Cook, stirring occasionally, 7-10 minutes or until softened; add garlic. Cook 1 minute.

Add 1 cup beef broth; cook, stirring constantly, 5-7 minutes or until liquid is reduced by half.

Recipe Comments & Reviews

I followed the recipe and the result was very good. I do have one complaint. The meat was too fatty for me. I think that boneless beef country ribs would have been a better choice of meat or even chuck roast would have worked.
