Chicken Raviolini Recipe

Chicken & Kale Raviolini

Kale adds crunch to this flavorful chicken and pasta dish.

1 (9-ounce) package refrigerated mini raviolini*
1 (14-ounce) package boneless skinless chicken tenders**
3 ounces (about 3 cups) kale, ribs and stems removed, chopped
1/2 cup red grape tomatoes, halved***
1 (8-ounce) package sliced fresh mushrooms
Shredded Parmesan cheese, if desired


Cook raviolini according to package directions. Drain; keep warm.

Place 2 Sauté Express® squares in 12-inch nonstick skillet over medium-low heat until melted; add chicken. Cook, turning once, 5-7 minutes or until golden brown and cooked through. Remove from pan. Cover; keep warm.

Melt remaining Sauté Express® square in same skillet over medium-low heat. Add kale, tomatoes and mushrooms; cook, stirring occasionally, 5 minutes or until well coated and mushrooms are softened.

Cut chicken into small pieces. Add chicken and pasta to kale mixture; mix lightly to coat. Place into serving dish. Sprinkle with Parmesan cheese, if desired.



*Substitute 1 cup your favorite-shaped dried pasta, cooked according to package directions.
**Substitute 1 pound boneless skinless chicken breasts.
***Substitute yellow cherry tomatoes for all or part of the red grape tomatoes.

I made this for my husband and we absolutely loved it! It was simple to prep and cook and delicious to eat. When we try out recipes for the first time, we always discuss things we could do differently. My husbands only remark was to make double next time.
This recipe is easy and very flavorful. Everyone in my family loved it.
I thought this was excellent! I was able to feed it to my husband and he didn't ask me what it was he just ate it because it smelt so good. The only thing I did differently from the instructions, was that I cut the chicken before I cooked it. It was just easier with the little time I had. I didn't have to add any extra seasonings! Would definitely suggest this recipe for people who like quick meals fast.
