Salty & Sweet Chocolate Peanut Butter Icebox Dessert

The saltiness of crackers complements the sweetness of the other ingredients in this layered dessert.

Ingredients

Mousse

1 (3.4-ounce) package vanilla instant pudding and pie filling mix
1 cup powdered sugar
1/2 cup creamy peanut butter

Ganache

1/2 cup Land O Lakes® Half & Half
1 (12-ounce) package real semi-sweet chocolate chips
1 (15.1-ounce) box buttery round crackers

Garnish

3 (1.5-ounce) peanut butter cup candy bars, chopped

Directions

Combine 1 cup half & half and pudding mix in bowl; beat with whisk until smooth.

Combine whipping cream and powdered sugar in bowl; beat until stiff peaks form. Add pudding mixture and peanut butter. Gently stir until smooth.

Place 1/2 cup half & half and chocolate chips in bowl. Microwave, stirring every 20-30 seconds, until smooth.

Spread 1/4 cup mousse into 7-inch circle on serving plate. Place 7 crackers around edge on mousse; place 3 crackers in middle. Spread with 1/2 cup mousse. Layer 7 additional crackers around edge, staggering second layer over first layer. Spread with 1/2 cup mousse. Spread 1/4 cup chocolate mixture over mousse. Repeat layering 7 more times; top with remaining mousse. Refrigerate at least 5 hours or overnight.

Reheat remaining chocolate mixture in microwave; drizzle over dessert. Garnish with chopped peanut butter cup candy bars.
