Asian Salad with Teriyaki Pork Tenderloin

Ingredients

1 (14-ounce) bag confetti coleslaw mix

1 cup snow peas, cut in half

1/2 cup sesame sticks

1/4 cup loosely packed cilantro leaves

1/4 cup shredded carrot

1 (11-ounce) can mandarin orange segments, drained

1 pound pork tenderloin

2 tablespoons Land O Lakes® Butter

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon firmly packed brown sugar

1/2 teaspoon garlic powder

1/8 teaspoon ground ginger

2 tablespoons mirin

2 tablespoons rice wine vinegar

1/4 teaspoon cornstarch

How to make

  1. STEP 1

    Combine coleslaw, snow peas, sesame sticks, cilantro, carrot and orange segments in bowl; mix well. Set aside.

  2. STEP 2

    Cut pork tenderloin into thin slices; cut slices into bite-sized pieces. Set aside.

  3. STEP 3

    Melt butter in 12-inch skillet over medium heat. Stir in soy sauce, hoisin sauce, brown sugar, garlic powder and ginger. Add pork; cook 3-5 minutes or until no longer pink.

  4. STEP 4

    Add mirin, rice vinegar and cornstarch. Cook, stirring constantly, 1-2 minutes or until sauce comes to a simmer and thickens.

  5. STEP 5

    Spoon pork and glaze over salad mixture; toss lightly. Serve immediately.

Tip #1

- Sesame sticks can be found in the bulk section of the grocery store. If sesame sticks are not available, substitute peanuts, cashews or wonton strips.

Tip #2

- Mirin is a condiment made from rice, often found in Japanese recipes. It adds sweetness and flavor. Mirin can be found in the Asian or gourmet section of large supermarkets as well as Asian markets.
