Roquefort & Pear Flatbread

The sweetness of the pear perfectly balances the sharp flavor of the blue cheese.

1 (11-ounce) tube refrigerated thin crust pizza dough
1/2 pound boneless skinless chicken breasts, cut into bite-sized pieces
2 firm Bartlett pears, cored, sliced 1/4 inch thick
1/2 cup Roquefort blue cheese crumbles
1 cup lightly packed baby arugula
1 teaspoon olive oil


Heat oven to 400ºF. Lightly grease baking sheet; set aside.

Unroll pizza crust onto prepared baking sheet. Bake 7 minutes; remove from oven.

Melt Sauté Express® square in 10-inch nonstick skillet over medium heat; add chicken. Cook, turning once, 4-5 minutes or until no longer pink in center. Remove from pan; keep warm.

Brush pan drippings over pizza crust. Top with pear slices and cheese. Bake 8-10 minutes or until edges are golden brown.

Toss arugula with olive oil in bowl. Top pizza with chicken pieces and arugula.
