Butter cookies studded with toffee pieces are crisp, yet chewy. Mailing cookies this year? This is a great cookie to send or mail anytime.
Heat oven to 350°F.
Combine sugar, butter, egg and vanilla in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, baking powder and baking soda; beat at low speed until well mixed. Stir in toffee bits.
Shape dough into 1-inch balls. Roll in sugar. Place 2 inches apart onto ungreased cookie sheet. Flatten to 1 1/2-inch circles using bottom of glass. If glass sticks, dip glass in sugar.
Bake 9-11 minutes or until edges are just lightly browned. Do not over bake. Sprinkle with sugar while warm. Cool completely.

I came across this recipe in a magazine called Victoria many years ago. I lost that card but found the recipe again here. The original recipe called for sanding sugar to be sprinkled on the cookies before baking, thus giving them the "sparkle". I make these at Christmas and take them to work, everyone loves them and looks forward to them every year!!! I double the recipe and use the entire bag of toffee bits (the bits do not store well). I bake on Sil-Pat's and get about 8 dozen.
I just made a batch of these cookies for the very first time. I must say, they were absolutely delicious! My whole family enjoyed them very much. I used 1 cup of Heath Toffee Bits and lined my baking sheet with parchment paper, for easy clean-up. They were some of the easiest and tastiest cookies, I have ever made. This recipe is so wonderful and yummy, I hope everyone out there gives it a try. You won't be sorry!

Very Yummy ! I used the whole bag of skor toffee chips (1Cup) & I added color sugar (sprinkles) pink, blue, purple before going in the oven ;) --> Recipe Only made 40 at 1 inch balls then press.
Just made these cookies and they are incredible! I didn't have vanilla so substituted almond extract. Someone had given me some granulated maple sugar so I mixed that with the sugar to dip them in. These are definitely my new favorite! Got a bit more than 3 dozen but have to confess that I ate at least three cookies in dough before they hit the pan. Happy Baking!
I love this recipe! So glad to have fund it again! I lost it and kept searching for Reader's Digest recipes forgetting it was a Land o Lakes recipes. I too add more toffee and I too get just about 3 dozen out of the stated recipe. Well worth making more!

Yummy, simple but different.
I have been making these for years ever since I bought a Land O Lakes holiday cookie recipe book many moons ago. I do bake them on parchment paper though, as I have found them to stick to the sheets otherwise. Could be due to the added toffee chips I use though. Either way, this is a fabulous recipe.
I do like this recipe and I think I'll make it again, but with a couple of changes. After reading some reviews, I decided to use 3/4 cup of toffee bits but next time I guess I can use some more. But the amount of sugar (to cream with butter) will be decreased because the cookies are slightly too sweet for me. Overall, this is a great recipe. The cookies looked very beautiful with the sugar on the surfaces. They really sparkled. And like someone stated, I used the exact amounts of ingredients and made a little over 3 dozens cookies, not 5 dozens.This is the second recipe I tried from Landolakes.com and I'm becoming a fan. Many thanks.
I gave it a four star rating because I felt it needed more toffee bits. I made them again using 1 1/3 c. of toffee bits and that made them a five star cookie. The extra bits make them much more chewy and gives a greater toffee flavor. I found that after making them three times the recipe only made a little over three dozen and I was sure to make the balls one inch as the recipe stated.
They have a great buttery taste. In fact everyone loved them so much,today I am making my 3rd batch in 2 weeks. I give it 5 plus stars.
Awesome cookie! Loved by all! The edible sprinkles that look like glittery snow also look very pretty on this cookie. A friend suggested this & we have added this to the recipe.

This was a wonderful recipe!! I added one cup of toffee bits and it was fabulous!
Made it for a cookie swap and it was a big hit. Only thing different is that I would add more toffee chips than what the recipe called for. Will be sure to add to my cookie collection for the future.

I have made this recipe every Christmas for many, many years and it is a favorite of my husband and my dad. I prefer to use the Skor toffee bits and they are a very pretty cookie. The sugar does make them very sparkly. TRY THIS RECIPE.

I have not made these cookies for a couple of years. I have a hard time finding toffee pieces in the market. If anyone can help with this I would me greatful. My hubby loves them.
I made these on Thanksgiving day in a hurry because we didn't have any cookies for our table. They baked quickly and were so easy to make! Very good too, great sugar cookie taste. And, they were all gone. I'm going to make them again for Christmas.

Wow, these are fantastic cookies! You won't be able to stop eating them, well... at least not until they're done! If you're looking for very good cookies to give out as gifts on holiday's, look no further. You can also add melted chocolate to the bottoms and sandwich 2 cookies together.
I have had this recipe clipped from a magazine since 2001 but just tried it this Christmas! It is one of the best cookies I have ever made. I loved how simple it was to make and the taste is wonderful. This will now be a staple in my Christmas baking. The only minor change I made was to roll the dough balls in colored sugar (red and green) for a festive look. This cookie is perfect for a cookie exchange or bake sale as well!
