Split Pea Soup

Old-fashioned, homemade Split Pea Soup made with smoked ham shanks. What could be better?

2 tablespoons Land O Lakes® Butter
2 ribs (1 1/2 cups) celery, chopped
1 medium (1 cup) onion, chopped
9 cups water
2 medium (1 cup) carrots, chopped
1 1/2 pounds ham shanks
1 (16-ounce) bag dried green split peas


Melt butter in 4-quart saucepan over medium-high heat until sizzling. Add celery and onion; cook 3-5 minutes or until vegetables are softened.

Add all ingredients except salt and pepper. Cook over medium heat 12-14 minutes or until mixture comes to a boil. Reduce heat to low. Cover; cook, stirring occasionally, 1 hour or until soup begins to thicken.

Remove ham shanks. Continue cooking 30 minutes.

Cut meat off bones; discard bones. Return meat to soup. Cook 5-10 minutes or until heated through. Season to taste with salt and pepper.

I just received this letter so I haven't tried it yet but it came at a good time. I have a ham bone from the holidays and I have all of the other ingredients on hand so I will be making it. It sounds delicious.
This is a good basic recipe to build on. I also add diced potato, matchstix carrots, some minced garlic, a bay leaf and a tiny pinch of cayenne pepper.
We prefer to use beef instead and i add a little bit ( to taste ) of thyme with the same delicious results
This is basically like I make it but I add a ham steak cut in 1/4 to 1/ in cubes.
