Slow Cooker Rustic Beef Stew

Serve this hearty beef stew with some crusty Artisan bread for the ultimate in comfort food dinner.

Ingredients

2 pounds beef stew meat, cut into bite-sized pieces
1/3 cup all-purpose flour
1 small (1/2 cup) onion, chopped
3 parsnips, peeled, sliced in half lenghtwise, sliced 1/2-inch thick
1 pound sweet potatoes, peeled, cut into 3/4-inch pieces
1 (28-ounce) can diced tomatoes with juice
1 (14.5-ounce) can beef broth
Salt, if desired
Pepper, if desired

Directions

Place beef stew meat and flour into large resealable plastic food bag. Seal bag tightly; shake bag until meat is coated in flour; set aside.

Melt 1 Sauté Express® square in 12-inch nonstick skillet over medium heat just until bubbles begin to form. Add onion; cook 2-3 minutes or until onions soften.

Add beef to skillet; discard extra flour. Cook, stirring occasionally, 5-7 minutes or until meat is browned.

Add beef and juices from skillet to slow cooker. Cut remaining Sauté Express® squares into small pieces; add to slow cooker. Add all remaining ingredients to slow cooker. Stir to combine.

Cover; cook on Low heat setting 8-10 hours, or High heat setting 4-6 hours or until vegetables and meat are tender. Season with salt and pepper, if desired.
