These cranberry orange cookies are layered in a cookie that's easy to make, bringing together two favorite holiday flavors.
Combine butter and sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg, milk and vanilla; continue beating until well mixed. Add flour and baking powder; beat at low speed until mixture forms a dough.
of dough. Set aside. Add dried cranberries, pecans and red food color to dough in bowl. Beat until well mixed. Knead orange zest into reserved one-third of dough.
Line 8x4-inch loaf pan with plastic food wrap, extending wrap several inches over ends. Divide cranberry dough in half; evenly press
half of cranberry dough into pan. Evenly press orange dough on top of cranberry dough. Cover with remaining cranberry dough, pressing down evenly. Overlap plastic food wrap to cover dough tightly. Refrigerate 4 hours until firm or overnight.
Heat oven to 375°F.
Remove dough from pan; unwrap. Cut dough into 1/4-inch slices; cut each slice into thirds. Place 2 inches apart onto ungreased cookie sheets. Bake 8-10 minutes or until edges are lightly browned.

I made these several years ago and everyone loved them. Planning to make these again this week but am going to try layering the dough, rolling out, and using cookie cutters to make shaped cookies.

This recipe should have 5 stars. It is just scrumptious. I think the amount of orange zest is perfect and such a compliment to thecranberry layers. Made these for Christmas and gave to many. Have already had 5 requests for this recipe. Thank you Land O Lakes.
Made this recipe for a cookie exchange @ church. Liked the taste of the cookie but would use a little less orange zest; it seemed to overwhelm the other flavors. Put in freezer as i did not want to wait the 4 hours for the dough to chill. Recipe did not make 7-1/2 dozen, however, so made 2 batches. Exchange is tomorrow night; will post results later.
