Pecan Carrot Cookies

These carrot cookies are sweetened with orange frosting, soft coconut, and pecan.

1 cup Land O Lakes® Butter, softened
1/2 cup sugar
1/2 cup firmly packed brown sugar
3 tablespoons orange juice
1 tablespoon freshly grated orange zest
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sweetened flaked coconut
1 cup coarsely chopped pecans
1 cup finely shredded carrots


2 cups powdered sugar
1 tablespoon freshly grated orange zest
2 to 3 tablespoons orange juice


Heat oven to 350°F. Combine butter, sugar and brown sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg, 3 tablespoons orange juice and 1 tablespoon orange zest. Continue beating until well mixed. Reduce speed to low; add flour, baking soda and salt. Beat until well mixed. Stir in coconut, pecans and carrots.

Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 10 to 12 minutes or until golden brown. Cool completely.

Combine powdered sugar and 1 tablespoon orange zest in small bowl. Beat at low speed, adding enough orange juice for desired spreading consistency. Frost cooled cookies. If desired, top each cookie with pecan half or grated orange zest.

Recipe Tip

- For thicker cookies, chill dough at least 1 hour. Roll dough into 1-inch balls.

Took to potluck Thanksgiving Dinner and they were a hit. Several people asked where I got the recipe and wanted a copy.
My family loves these cookies. They don't even wait for me to frost them, although the frosting is an excellent topper. From the adults to the 2 year old - these are a "Hit".
As the other ladies said, it takes time, but they are worth it. Has anyone tried to freeze them and will it hurt the flavor?
I made these cookies when family and friends came this weekend. Everyone loved them including some "picky" eaters and several people asked for the recipe. I agree with the first reviewer who said they were a little time consuming, but were totally worth it. I will make them again.
These cookies are wonderful! A little bit time consuming but 100% worth it. I used fresh grated orange peel and as long as I had the orange I went the extra step and used fresh squeezed orange juice as well.
