Peanut Butter Cookie Cups

Kids will love these peanut butter cup cookies that are filled with peanut butter candies.

Ingredients

1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup Land O Lakes® Butter, softened
1/2 cup creamy peanut butter
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 (13-ounce) package miniature peanut butter cups, unwrapped

Directions

Heat oven to 350°F. Spray miniature muffin pan with no-stick cooking spray. Set aside.

Combine sugar, brown sugar, butter and peanut butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue beating until well mixed. Add flour, baking soda and salt; beat at low speed, scraping bowl often, until well mixed.

Shape dough into 1-inch balls. Place each ball into prepared miniature muffin cup. Bake 11-13 minutes or until lightly browned.

Remove from oven; press peanut butter cup in center of each cookie. Cool 30 minutes. Remove from pan. Cool completely.

I've made these for a few years now--on my list of Christmas cookies! Always a favorite of many in my family
Very delicious and easy to make. I need to get a bigger mini-muffin pan....it only makes 12 at a time. I plan on making these cookies again!
I made these with peppermint sugar cookie dough and candy cane cups and a second batch with oatmeal butterscotch dough and caramel cups .. both were sooo good and not quite as super rich as the peanut butter with peanut butter cups....
Easy to make and taste delicious very easy to pop in your mouth.
These are fantastic and easy to make. I made them for a Valentine's treat and they were a huge hit. I will make again for Easter and Christmas.
I must be doing something wrong. I couldn't get the peanut butter cup to go into the cookie without imelting. I let them cool for an hour and the chocolate was stil all gooey when I tried to take them out of the pan. I couldn't figure out how to take them out of the pan so i used a spoon. Also, the peanut butter cup is not inside the cookies but resting on top. Was I supposed to make a well for the candy to go into? It was not mentioned in the recipe. I love to bake and was very excited to make these for Christmas...but i don't think they are supposed to come out like this so i am very disappointed. :(

This cookie is very easy to make. First each cookie ball is pushed into a mini muffin cup and then baked for 11 - 13 minutes. Then you press or push the peanut butter cup into the cookie while it is hot.You will need to push down as shown in the picture. You should cool the cookie in the pan at least 30 minutes and possibly even 1 hour. I also use a tableware teaspoon to when taking the cookies out of the pan. The spoon helps to release the cookie from the pan.

Followed the recipe as shown, very easy and fun for the grandchilden to help. They are scrumptious. We absolutely loved them. Great recipe to make again and again!
These are delicious!
This was indeed easy and they tasted good. I only got about 28 cookies though and they did'nt look way bigger than the picture or anything. I think I would double the recipe next time and especially if I were to make them for a potluck or something like that.

I made this and it is easy, and fabulous. They even freeze well. They look very pretty in their own mini cupcake liner.
I made these for friends who are peanut butter/chocolate fans, so I expected them to be well received. They absolutely loved them! I must have made them a bit bigger than I should have because I only made 39 instead of 48....but I'm not complaining!!!
These were easy to make, and really had visual appeal as well as tasting great.
These cookies are wonderful and very easy to make. They came out perfectly. This is a good recipe to make with kids. My 9 year old loved making these with me. Have gotten lots of compliments on these cookies. My husband is not a big fan of peanut butter cookies but he loved these. He couldn't stay out of the cookie jar.
These are an all time fave. I don't have a mini-muffin pan. So, we used mini muffin liners and they worked great. I actually like them better that way because it adds a nice touch on a platter to have them each in their individual wrappers.
