Thick ‘n Chunky Chili

Ingredients

Chili

1 1/2 pounds ground beef
1 large (1 cup) onion, chopped
1 to 2 chopped Anaheim chile peppers
2 teaspoons finely chopped fresh garlic
2 (14 1/2-ounce) cans diced tomatoes
1 cup beef broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
1/2 teaspoon salt
1/2 cup water
1/4 cup masa harina flour*

Condiments

2 ounces (1/2 cup) LAND O LAKES® Cheddar Cheese, shredded
Tortilla chips or cornbread, if desired

Directions

Place ground beef, onions, chiles and garlic in 4-quart saucepan. Cook over medium-high heat, stirring occasionally, until beef is browned (7 to 10 minutes). Drain fat.

Add all remaining chili ingredients except water and masa harina. Continue cooking until mixture comes to a boil (3 to 4 minutes). Reduce heat to low. Cook 30 minutes.

Combine water and masa harina in small bowl. Gradually stir into chili. Cook, stirring occasionally, until mixture is slightly thickened (15 to 17 minutes).

To serve, top each serving with cheese. Serve with tortilla chips, if desired.

Recipe Tip

Masa harina is Mexican corn flour. It is made from corn that has been soaked in lime, then finely ground into flour. It is like corn meal, but much finer, and it can be found in most supermarkets in the ethnic or baking section. Masa harina is used to make corn tortillas and as a thickener in many chilis and soups.

This was an easy, delicious chili. Masa harina was a new ingredient for me, but it really made a difference. Will cook again.
THIS WAS A VERY GOOD CHILI. THE ONLY THING IS 2 TBSP OF CHILI POWER IS NOT ENOUGH. I PUT 4 TBSP OF CHILI POWDER IN IT. IT EVEN TASTE MUCH BETTER THE NEXT DAY. IT'S EASY TO MAKE A VERY GOOD.
