So easy, so tasty and so crunchy, these no-bake clusters combine sweet and salty flavors.
Line 2 baking sheets with waxed paper. Set aside.
Melt butter in 3-quart saucepan 2-3 minutes over low heat, stirring constantly. Stir in brown sugar and corn syrup. Increase heat to medium. Cook, stirring constantly, 1-2 minutes or until mixture comes to a full boil. Boil 1 minute. Remove from heat. Stir in vanilla. Add cereal and cashews; gently stir until well coated.
Drop mixture by rounded tablespoonfuls onto prepared baking sheets. Cool completely.
Cashew Corn Crunch Bars: Double all ingredients. Spray 13x9-inch pan with no-stick cooking spray. Spread cereal mixture into prepared pan. Cool completely. Cut into bars.
Dietary Fiber: 0g
These are sooo decadent! And soooo easy to make! My only suggestion is to add a pinch of salt to to the recipe as I'm mostly tasting butter and sugar, but no salt although I used salted cashews.
These are great to make if you want the taste of nutty caramel popcorn without the hulls. I have made this recipe several times. I am making it again this Christmas. Thanks for the great recipe!
