Slice 'n Bake Brownie Rounds

Slice and bake cookies that have that rich, chocolate brownie flavor.

Ingredients

1 1/2 cups sugar
1 cup Land O Lakes® Butter, softened
1 cup real semi-sweet chocolate chips, melted, cooled
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup mini real semi-sweet chocolate chips
1/4 cup large grain sugar, if desired

Directions

Combine sugar and butter in bowl. Beat at medium speed until creamy. Add melted chocolate chips, egg and vanilla; continue beating until well mixed. Add flour, baking powder, baking soda and salt; beat at low speed until well mixed. Stir in mini chocolate chips.

Divide dough in half; shape each half into 7-inch log. Wrap each in plastic food wrap; refrigerate 1-2 hours or until firm.

Heat oven to 375°F.

Cut logs into 3/8-inch slices with sharp knife. Place 1 inch apart onto ungreased cookie sheets. Sprinkle cookies with large grain sugar, if desired. Bake 8-10 minutes or until set. Cool 1 minute on cookie sheets; remove to cooling rack.

Recipe Tip

For smaller cookies, divide dough in half; shape each half into 12-inch log. Continue as directed. 60 cookies

These were very easy to make, and they made a lot! but didn't have as much of an intense chocolate taste as I would like from a chocolate cookie. They were also crispier than I expected, which may be due to overbaking I usually need to make something a few times to tweak the convection timing. I will definitely try these again, maybe adding a few TB of cocoa and baking for a shorter amount of time.
Make sure you use mini chocolate chips when making these otherwise its hard to slice the cookies. Other than that I loved them.
This is a great, rich chocolate cookie! I put chopped walnuts in one roll and chocolate in the other. Nice to have in the freezer; just slice and bake without all the preservatives!
