Diploma Cookies

Tuiles cookies are a spring cookie recipe perfect for the graduate. Surprise them with diploma cookies containing fortunes you can print from the link below.

1 tablespoon fresh lime or lemon juice
1/2 cup sugar
1/2 cup all-purpose flour
1/3 cup Land O Lakes® Butter, melted
1 pound vanilla-flavored candy coating (almond bark)

Heat oven to 350°F. Lightly spray cookie sheets with no-stick cooking spray. Generously butter handle of wooden spoon. Set aside.

Combine egg whites and lime juice in bowl. Beat at high speed until foamy. Continue beating, gradually adding sugar, until glossy and stiff peaks form. Gently stir in flour and butter.

Spoon 2 teaspoons batter onto prepared cookie sheet; evenly spread batter to 3-inch circle. Repeat with remaining batter, placing only 3 cookies onto each cookie sheet. (Do not re-use cookie sheets without first washing and re-applying no-stick cooking spray.)

Bake 5-8 minutes or until edges just begin to brown. Immediately shape cookies by wrapping around buttered handle of wooden spoon. Gently remove from cookie sheet; cool completely.

Melt candy coating in 1-quart saucepan over low heat, stirring occasionally, 3-4 minutes or until smooth. Carefully dip each end of cookie in coating. Gently shake cookie to remove excess coating. (Cookies are very fragile.) Place onto waxed paper 15 minutes or until coating is set. Repeat with remaining cookies and coating.

Download, print and cut apart fortunes provided with this recipe or write fortune messages on narrow strips of paper. Insert 1 fortune inside each cookie. Tie ribbons in school colors around center of each cookie.

Recipe Tip

- If using dark cookie sheet, line with aluminum foil; spray with no-stick cooking spray.

- When cookies are baked, immediately loosen them from cookie sheet with thin metal spatula. Working quickly, place buttered handle of wooden spoon on one side of cookie; carefully roll up. Keep bowl of spoon over edge of counter to make rolling easier. Slide cookie off spoon handle onto cooling rack. If cookies harden before rolling them, put cookies back into the oven about 1 minute or until they soften.

- Microwave vanilla candy coating 60 seconds. Stir; continue microwaving 30-60 seconds or until candy coating is melted. Dip each end of cookie in coating.

Do these store well in an airtight container for a day or 2? I am trying to see if I can bake these ahead of time to decrease my baking the the day of the event. Thanks!

Yes you can make these cookies ahead of time as you indicate. I would store them in a loosely covered container so they stay crisp.

Some tips I learned. Follow the directions word for word. I put all the batter in a ziplock bag, cut a small tip off and used that to spiral the batter in a circle. Too much better makes the cookies more, not less, fragile. I lifted the soft cookie on a metal spatula and rolled the wooden spoon from there.
These would make great fortune cookies too!
very fraigle hard to work with takes lots of patience but are cute when finished
VERY DIFFICULT to make. They are too hot to try to form over wooden handle. I only actually formed 3 cookies. Cookies themselves taste great in broken pieces!
The recipe only made about a dozen for me but I may have used more batter for each than recommended. The cookies rolled up pretty easily although the first one seemed to crack probably because it wasn't quite cool enough. Very tasty!
Tasty, cute, and clever! I found them a little difficult to make, and got rather discouraged, the first time. But, with perseverance they turned out just fine! It got easier, though, the more times I made them: Well worth it, too... they present - beautifully!
