Raspberry-Plum Pork Chops

3 (1/2-inch thick) rib pork chops
1 teaspoon finely chopped fresh garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup raspberry preserves
1 tablespoon raspberry or white wine vinegar
2 red plums, sliced


Melt butter in 12-inch skillet until sizzling; add pork chops and garlic. Cook over medium-high heat, turning once, until internal temperature reaches at least 145°F. and pork chops are browned (8 to 10 minutes). Season with salt and pepper. Remove chops to serving platter. Keep warm.

Add preserves and vinegar to same skillet. Cook over medium-high heat until mixture comes to a boil (1 to 2 minutes). Add plums; cook until plums are tender (1 to 2 minutes). Serve sauce over pork chops.

Recipe Tip

Plums come in a variety of colors and sweetness. Red plums tend to be more tart than purple plums and their yellowish interior provide a nice contrast to the crimson sauce. Purple plums have a darker hue and lend a rich color to the pork chops. Plums are a terrific convenience food - no peeling and they cook in minutes!
