3 (1/2-inch thick) rib pork chops
1 teaspoon finely chopped fresh garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup raspberry preserves
1 tablespoon raspberry or white wine vinegar
2 red plums, sliced
Plums come in a variety of colors and sweetness. Red plums tend to be more tart than purple plums and their yellowish interior provide a nice contrast to the crimson sauce. Purple plums have a darker hue and lend a rich color to the pork chops. Plums are a terrific convenience food - no peeling and they cook in minutes!
