This easy gluten-free butter cookie can be decorated using your favorite sugars or candies.
Heat oven to 400ºF. Combine sugar, butter, egg and vanilla in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Reduce speed to low; add gluten-free flour blend and baking soda. Beat, scraping bowl often, until well mixed.
Shape dough into 1-inch balls; roll in gluten-free decorator sprinkles or sugars as desired. Place 2 inches apart onto ungreased cookie sheets. Flatten slightly with bottom of glass dipped in sugar. Bake for 5 to 8 minutes or until edges are lightly browned.

My cookies came out tasting Ike popcorn
These came out perfect. I used Bob's Red Mill gluten free baking mix for the flour. Some of the cookies were rolled in cinnamon sugar, some were plain, and some had chocolate chips added. I didn't bother pressing them flat.
Everyone LOVED these! I dipped them in chocolate & added GF sprinkles & they were the hit of the dessert table :) (I used a gf flour that I make for all of my baking). I was able to put this dough into a cookie press too :)
I made these yesterday and they were very good. They held their shape well, didn't flatten out when baked. I made them with the gf sprinkles and some with sugar. Thank you for the recipes!
We loved this recipe! I used some fresh squeezed lemon instead of the vanilla (because we didn't have any vanilla). i also made a thumb print and filled with our favorite jam and then sprinkled with sugar. Delicious, not many ingreduents and super easy!
