Terry's Vanilla Biscotti

Enjoy these rich, flavorful biscotti made more tender with butter. They're a favorite of Terry Bolton, Paducah, Kentucky, pro bass angler.

Ingredients

1 cup sugar
1 cup LAND O LAKES® Butter, softened
6 eggs
1 tablespoon vanilla
5 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt

Directions

Heat oven to 350°F. Combine sugar, butter, eggs and vanilla in large mixer bowl. Beat at medium speed, scraping bowl often, until well mixed (2 to 3 minutes). Reduce speed to low; add flour, baking powder and salt. Beat until well mixed (1 to 2 minutes).

Divide dough into four equal portions. Shape each portion into 6x3-inch log. Place two logs each 3 inches apart onto ungreased cookie sheets. Bake for 25 to 30 minutes or until set and lightly browned.

Remove logs from cookie sheet. Cut into 1/2 inch slices with serrated knife. Arrange slices, cut-side down, onto cookie sheet. Continue baking for 20 to 22 minutes, turning once, until crisp and golden brown on both sides. Place on cooling racks; cool completely.

I used this recipe and added crushed almonds, walnuts and mixed dried cherries with blueberries. The biscotti are just delicious!! Will use this base recipe again!!!
